Grilled Vegetable & Lemon Wrap Bundle

Ingredients
- 1 small butternut squash, sliced thinly
- 1 head of broccoli, cut into florets
- 2 carrots, peeled and sliced into rounds
- 2 beefsteak tomatoes, sliced
- Romaine lettuce, torn
- 1 lemon (juice and zest)
- 2 tbsp EVOO
- Salt and pepper to taste
- Wraps or flatbreads (or you can use the lettuce leaves for wraps)
*Add cheese or meat to taste
Instructions
1. Preheat your grill or grill pan.
2. Toss the butternut squash, broccoli, and carrots with olive oil, salt, pepper, and lemon zest.
3. Grill the vegetables until they’re tender and slightly charred (about 5-7 minutes).
4. Assemble the wraps: place a handful of romaine lettuce on the flatbread, then top with grilled vegetables, fresh tomato slices, and a squeeze of lemon juice. Add desired meat, cheese and toppings to taste.
5. Roll up the wraps and serve warm.
